During lautering the malt peelings, the brewer grain, is separated from the wort. Here the malt peelings are the filter material. The mash is re-circulatet as far as a filter layer was built up.

During lautering, the position of the cutting blades is controlled by differential pressure between the upper and lower halves of the lauter tun. To ensure that no vacuum is produced here, the difference in pressure that forms above the false base and spent grains must not be allowed to become too great.
